Prep Cook

Verjus is a seasonal wine bar and restaurant from Chef Michael Tusk, rooted in thoughtful sourcing, classic technique, and a deep respect for ingredients. Our kitchen is collaborative, disciplined, and driven by a shared commitment to quality and hospitality.

We are seeking a Prep Cook who is organized, motivated, and excited to support a fast-paced, professional kitchen while building strong foundational skills.

• Execute daily prep lists accurately and efficiently, following Verjus standards and recipes

• Prepare vegetables, proteins, stocks, sauces, and mise en place with care and consistency

• Maintain proper food handling, labeling, storage, and sanitation practices at all times

• Assist with receiving and organizing deliveries

• Support the line during service as needed

• Maintain a clean, organized prep and storage area

• Communicate clearly with chefs and teammates to ensure smooth kitchen operations

• Previous kitchen or prep experience preferred (but not required for the right candidate)

• Strong attention to detail and pride in craftsmanship

• Ability to work efficiently, stay organized, and follow direction

• Interest in seasonal cooking, quality ingredients, and professional kitchen standards

• Ability to stand for long periods and lift up to 40 lbs

• Valid California Food Handler certification (or willingness to obtain)
