Chef de Partie

The Happy Crane is a modern Chinese restaurant in San Francisco that seeks to change the perception of what a Chinese restaurant can be. We are seeking a skilled and passionate Chef de Partie who ideally comes with strong technical abilities and a deep appreciation for Chinese cuisine or broader Asian culinary traditions. You’ll take ownership of a station, contributing to an innovative and elevated menu rooted in cultural authenticity and modern technique. Responsibilities:

• Manage and execute prep and service from an assigned station
• Consistently deliver high-quality dishes with accuracy, finesse, and attention to detail as well as plating aesthetics
• Communicate effectively with the Kitchen team and Chef/Owner
• Collaborate closely with the Chef/Owner, Sous Chef, and Junior Sous Chefs on evolving menu items
• Support Chef/Owner, Sous Chef, and Junior Sous Chefs with taking inventory, updating pars/current stock and station ordering
• Maintain a clean, organized, and efficient station operating at the high standard of hygiene that The Happy Crane has set for the restaurant
• Support junior cooks and contribute to an inclusive and positive kitchen culture
• Lead mise en place for the station and maintain organization throughout the shift
• Adhere to health and safety regulations, including proper food handling and sanitation

Qualifications:

• At least 2 years experience in either high-volume, fine dining and/or upscale Asian/Chinese cuisine kitchens
• Strong knife skills and deep understanding of Asian ingredients, sauces, and techniques
• Experience with wok cooking, dim sum preparation, or regional Chinese cuisines is a plus
• Ability to work calmly under pressure, multitask, and maintain consistency
• Passionate about culinary innovation, seasonality, and cultural respect
• Open to feedback, mentoring others, and continuous improvement
• Availability for set schedule from Tuesday to Saturday
