Head Chef

All Time is a busy neighborhood restaurant. The environment is fast-paced, highly dynamic, and requires a great deal of organization, attention to detail, and passion for hospitality. We’re looking for a person with line cook experience as well as leadership experience with the desire to run the BOH operation and lead these teams. Our food ethos is product-driven, quality first and produce exclusively from farmers. The menu changes when necessary, not for no reason but in harmony with what's available and freshest; we adapt to the seasons, the weather, and do not compromise on quality. We bake our pastries and bread in house daily. Our programs are robust and maintain an impressively high quality for the volume we do. This role is crucial to keeping those standards high, and executing on that level daily with the rest of the team. Responsibilities include: MENUS
- Oversee AM & PM, take out, and pastry menus
- Creative development of menus in collaboration with ownership to cook with the standard, seasons, and vision
- Farmers market sourcing -- we source all of our produce from the markets
- Quality control: Rigorous line checks with cooks before service on mis / to check dressings, ingredients, smelling for freshness, daily and teaching the cooks to do the same. Monitor correct temperatures and food safety practices
- Coach, correct, and cook on line when necessary
- Keep the team in sync and working together, understanding that each cook is part of a whole
- Maintain adequate staffing to support healthy schedules
- Manage line cooks, prep team, and dish for food safety and best practices, cleanliness, and organization
- Quality control on food pick-ups and prep items — correcting and coaching for consistency and quality
- Expo
- Understanding general front of house standard operating procedures (guest right of way, traffic flow, host stand etiquette, guest interaction, tone and environment)
- Holding teams accountable to our highest and best standards, knowledge of menu and dishes
- Maintain and develop relationships with vendors, farmers, and sales reps in accordance with company culture of empathy, product standards, and respect in both directions
- Daily Recaps to full MGMT to keep all departments looped in on service issues, personnel issues, menu and product changes, safety, repairs / building maintenance needs so everyone is on the same page
- BOH Schedules: 2 weeks out minimum
- Manage time off requests
- Upload and track invoices
- Keep order guides, station guides, prep sheets and recipe books up to date, in both languages and current
- Hiring, promoting, disciplining, and firing according to company HR protocols (documenting write-ups, reviews, and filing necessary termination paperwork)
- Adhere to labor budget as set forth, communicate any changes or need ahead of time
- Food and menu costs: understand how to cost dishes and price them for menus with fact-based information
- Ordering correct pars to minimize waste and not run out of menu items, keep everything fresh
