Sushi Chef – Shin Japanese Cuisine (Hollywood, CA)

Shin Japanese Cuisine is seeking an experienced Sushi Chef to join our fast-paced, high-energy team in the heart of Hollywood. We are looking for someone passionate about quality, consistency, presentation, and hospitality who thrives in a busy kitchen environment and takes pride in their craft.

At Shin, we specialize in premium sushi, ramen, rice bowls, and Japanese-inspired cuisine with a strong focus on fresh ingredients, speed, cleanliness, and guest experience.

Responsibilities:

• Prepare sushi, sashimi, hand rolls, specialty rolls, and other menu items to restaurant standards
• Maintain exceptional food quality, presentation, and consistency during high-volume service
• Properly handle, store, and rotate all fish and ingredients according to food safety standards
• Maintain a clean, organized, and sanitary sushi station at all times
• Assist with prep work, inventory, and receiving deliveries as needed
• Work collaboratively with kitchen and front-of-house staff to ensure smooth service
• Follow all health department and restaurant standards

Qualifications:

• Previous experience as a sushi chef required
• Strong knife skills and knowledge of fish preparation
• Ability to work efficiently in a fast-paced environment
• Reliable, punctual, professional, and team-oriented
• Strong attention to detail and cleanliness
• Weekend and evening availability required
• Ability to multitask and stay composed under pressure
