We are proud to be recognized for our sustainability practices, one-of-a-kind dinner experience, and world-class excellence in hospitality.The Back Waiter plays a key support role in the seamless execution of service, maintaining the flow and rhythm of the dining room. In this role, you will be responsible for building and resetting tables, marking flatware and glassware, running and clearing courses, maintaining water and beverage service, and ensuring the Captains and Lead Servers are consistently supported. This position requires speed, precision, and a proactive mindset to uphold Michelin-level dining and Forbes 5-star service standards.
The work schedule is Thursday - Sunday (3:00 PM - 11:30 PM or closing). This position requires weekend availability and the ability to work late nights. Based at our JUSTIN Estate: 11680 Chimney Rock Road, Paso Robles, CA 93446.
Job Description
- Assist with dining room setup prior to service, including but not limited to: linens, glassware, silverware, and tabletop details, fans/heaters, and other equipment
- Maintain the cleanliness of the interior and exterior of guest areas
- Maintain water service and refill beverages promptly and discreetly
- Deliver and clear food courses in coordination with the Captain and kitchen within FORBES 5 star service
- Accurately mark tables with appropriate flatware and glassware prior to each course
- Maintain clean and organized service stations and sidework areas throughout the shift
- Reset and flip tables post-departure with attention to detail and speed
- Support Captains with guest needs and respond quickly to requests during service
- Break down and close dining room post-service, including but not limited to polishing, organizing, and restocking service tools, fans/heaters
- Must be in an approved, clean uniform, with a natural and clean appearance
Qualifications
The Back Waiter must possess a strong sense of urgency, organization, and situational awareness, with the ability to work efficiently in a fast-paced, team-oriented environment; they should know proper table settings, course progression, and stemware, communicate clearly with the service team, and maintain a discreet, polished presence in the dining room.
- 3+ years experience in serving at restaurants (casual) OR 2+ years experience as a back waiter in a Forbes 5-star or Michelin restaurants
- Ability to work full-time (30-35 hours per week) and late nights, weekends, and holidays
- Must be able to communicate verbally and in writing in English
- Strong work ethic, willingness to learn, and attention to detail are essential
- Valid Food Handler’s Card
- Clear and calm verbal communication
- Solution-oriented, skilled at proactively identifying service challenges and supporting servers to ensure flawless fine dining experiences
- Ability to work quickly in a high-paced, physically and mentally demanding environment
Pay Rate: $19.50 - $21.00 an hour. Final compensation will be dependent upon skills & experience.
