Located in the heart of historic downtown Healdsburg, Little Saint is a vibrant meeting place where guests are invited to connect over food, music, art and conversation. Inside our 10,000-square-foot space, Little Saint offers up a full-service farm-forward restaurant, cafe and wine shop with a focus on plant-based cuisine. The building is home to exciting live music and thought-provoking conversations, as well as a series of film screenings and performances to benefit local artists and our farming community.
WHAT’S ON YOUR PLATE
At Little Saint, our pastry program is at the heart of how we create joy, nourish community, and showcase the craft of plant-based food. This is a hands-on role for a baker who finds joy in the rhythm of production, and is passionate about advancing the craft of artisan breads and plant-based baking. The Lead Baker will oversee production schedules, manage consistency and quality, and work closely with the Pastry Program Manager to evolve offerings that build Little Saint’s reputation as a hub for artisan, plant-based baking.
WHAT YOU’LL DO
Production & Craft
- Lead daily bread and pastry production, ensuring the highest standards and consistent quality, flavor, and presentation.
- Apply artisan techniques in a fully plant-based context, innovating with alternative ingredients while upholding craft standards.
- Manage proofing, baking, shaping, and finishing processes for breads and pastries.
Operational Execution
- Maintain and adjust production schedules to meet demand across the restaurant, coffee bar, prepared foods and grab&go retail and other departments.
- Oversee inventory, ordering, and storage of bakery ingredients with accuracy and efficiency.
- Maintain equipment and bakery facilities in top working order.
Team & Leadership
- Train, mentor, and support entry-level team members as needed.
- Foster a positive, inclusive, and collaborative workplace in line with Little Saint’s values.
- Complete other duties as assigned to ensure a cohesive team and shared responsibility.
Standards & Compliance
- Enforce food safety, sanitation, and allergen protocols.
- Ensure proper use of labeling, dating, and waste management systems.
- Champion consistency through systems, recipes, and SOPs.
WHO YOU ARE
- An experienced baker with 3+ years of professional bread/pastry production experience
- Vegan baking experience is a plus, passion for it a must.
- Skilled in artisan techniques, with a curiosity for innovation and alternative ingredients.
- Operationally strong — organized, detail-oriented, and efficient under pressure.
- A mentor and collaborator who uplifts the team and culture around them.
- Excited to help build Little Saint’s reputation as a leader in plant-based, artisan baking
- California Food Safety Certified and well-versed in state food safety and public health regulations.
PHYSICAL REQUIREMENTS
- Ability to stand and walk for extended periods of time
- Ability to regularly and continuously lift up to 50 pounds
- Manual dexterity and the ability to perform repetitive motions
- Frequent walking, standing, bending, and reaching
