Chef de Cuisine

Market is looking for a Chef de Cuisine. In the role, you hold full operational responsibility for the kitchen, ensuring the restaurant's culinary standards are executed consistently at every service. They lead and develop the kitchen team, manage day-to-day operations, and act as the primary guardian of the restaurant's food identity.

KEY RESPONSIBILITIES

Culinary Leadership

- Lead the kitchen brigade with authority, clarity, and a culture of excellence.

- Be the final word on food quality during service; nothing leaves the kitchen below standard.

- Represent and protect the culinary identity of the restaurant.

Menu Stewardship & Input

- Uphold the integrity of the menu; with every dish executed as intended.

- Contribute ideas and observations to inform menu development.

- Maintain accurate recipe cards, plating guides, and cost analysis for all dishes.

People & Team Development

- Foster positive kitchen culture built on respect, learning and accountability.

- Recruit, mentor, and retain a high-performing kitchen team.

- Conduct regular performance reviews and set clear development goals for all team members.

Financial Management

- Achieve food cost targets; monitor, report, and take corrective action when needed.

- Manage labour scheduling to align with covers and budget requirements.

- Drive waste reduction and smart purchasing without compromising quality.

Supplier & Procurement

- Build and maintain strong relationships with key suppliers and producers.

- Source the best quality ingredients within budget, with an eye on seasonality and provenance.

- Negotiate pricing and terms to support the restaurant's cost structure.

Operations & Standards

- Oversee all kitchen operations, including scheduling, workflow, and equipment upkeep.

- Ensure full compliance with health, safety, and food hygiene regulations.

- Collaborate with front-of-house leadership to deliver a seamless guest experience.

About the role
- $90,000 - $105,000 depending on experience.
- 5 days/week. Two consecutive days off.
- 2 weeks PTO.
