Director of Food and Beverage
Status: Exempt
Estimate Pay Range: $74,500.00 - 80,000.00 (Employer est.) Primary Objective:
Manages and directs the Food and Beverage Outlets (Sirocco Restaurant, Room Service, Luxe Lounge, Pool Bar and Service), Banquets Department in addition to banquet bars to ensure the highest level of guest satisfaction and that financial goals are met. Areas of Accountability:
- Oversee the daily operations of all food and beverage outlets, banquets operations maintaining the highest standards of service and quality.
- Collaborate with culinary and service teams to ensure seamless and memorable dining experiences.
- Foster a culture of guest-centric service, ensuring that every guest receives personalized and exceptionals service.
- Address guest feedback promptly and implement improvements to enhance overall satisfaction.
- Lead, mentor and inspire a dedicated team, promoting a culture of excellence and professional development.
- Conduct regular training sessions to ensure colleagues are well-versed in-service standards and product knowledge.
- Assist in budget development and financial planning for the food and beverage department.
- Implement cost-control measures while maintaining the highest quality of ingredients and service.
- Provides constructive and timely performance evaluations.
- Handles discipline and termination of employees in accordance with company policy.
- Achieve budgeted revenues and expenses and maximize profitability related to the food and beverage department and banquets department and participate in the preparation of the annual hotel budget.
- Maintain a profit margin of 30% in Food & Beverage, including Banquets.
- Assist in preparing local and national sales/marketing programs for food and beverage.
- Develop short-term and long-term financial and operational plans for the food and beverage and the banquets department which support the overall objectives of the hotel.
- Maintain inventory control procedures for Food & Beverage, Kitchen and Banquets Department.
- Increase the level of guest and client satisfaction by delivery of an improved product through colleague development, job-specific training, and quality of product.
- Manage in compliance with established company policies and procedures and in compliance with local, state, and federal laws and regulations.
- Maintain procedures for security of monies and maintains procedures for credit control and handling of financial transactions.
- Guide and inspire exceptional team performance and mentor managers, supervisors, and team members in the Food & Beverage, Banquet and Kitchen Division.
- Build team capability, knowledge, and resources to meet short- and long-term business objectives.
- Manage operational coverage, workload, and resource distribution within and across teams
- Oversee the efforts to ensure service standards are consistently met and exceeded.
- Enhance services and standards for the Food & Beverage, Kitchen and Banquets Division.
- Accountability for P&L in the Food & Beverage, Kitchen, and Banquets Division.
- Anticipate future guest trends and align services offered in the Food & Beverage Division
- Develop innovative solutions to enhance communication of guest and service information.
- Must have knowledge of F&B preparation techniques, health department rules, and regulations, liquor laws, and regulations.
- Communicates the Luxe Sunset Boulevard Hotel brand standards for all Food and Beverage Outlets positions.
- Conducts monthly departmental meetings.
- Ensures positive associate relations through open communication.
- Responds quickly to colleague and guest requests or complaints in a friendly manner and takes appropriate action. Follows up to ensure satisfaction.
- Implements standard operation procedures to improve beverage cost.
- Interview, hire, train, develop, conduct performance evaluations, resolve problems and recommend discipline and/or termination when appropriate for staff members.
- Demonstrate and enforce high standards of appearance and grooming.
- Attentive, helpful and friendly to all customers, guests, managers and fellow employees.
- Prepares and audits Banquet Bar requisitions and returns to insure proper cash handling and pouring controls are adhered to.
- Attends BEO’s and Oversees Banquet Functions.
- Assures that all hourly associates are provided prescribed appropriate rest and meal breaks with a “hands on” approach.
- Consistently monitors and makes recommendations on eliminating unnecessary overtime by being “on the floor.”
- Prepare Food and Beverage Outlet, Kitchen and Banquets weekly schedules based on business levels at hand using accurate forecasting.
- Keeps General Manager fully informed of all problems or matters of significance.
- Performs all duties and responsibilities in a timely and efficient manner in accordance with established company policies and procedures to achieve the overall objectives of this position.
- Maintains a favorable working relationship with all other company employees to foster and promote a cooperative and harmonious working environment.
- Adheres to company policies and procedures.
- Attends work as scheduled.
- Follows hotel’s dress and grooming standards.
- Minimizes safety hazards by following all safety rules and procedures.
- At all times, projects a favorable image of Luxe Sunset Boulevard Hotel to the public.
